VICKY'S FRUITCAKE

    VICKY'S FRUITCAKE

    MAKES:4-6 LOAVE PANS OR 2 BUNDT AND 1 LOAVE PAN GREASED WITH FLOUR
    AND OIL YOU COULD EVEN USE BUTTER

    4 cups of raisins
    3 large containers of candied fruit
    walnuts or pecans 3 cups or more if you like alot of nuts
    1 cup of orange pinapple juice 1 cup of cold coffee
    5 cups of sifted cake flour
    1lbs. of shortning
    2 cups white sugar
    1 cup of brown sugar
    3 teaspoons of cinnamon
    1 teaspoon of all spice
    12 eggs seperated
    1 teaspoon of vanilla
    2 grated lemon zest and juiced
    2 cups of brandy

    soak 3-4 days before making

    raisins
    fruit mix
    nuts
    lemon and juice
    brandy

    preheat oven to 285 degrees
    take all dry ingredients except sugar

    flour
    allspice
    cinnamon

    cream
    shortning
    sugar(both)
    vanilla
    yellow yolks of the eggs

    in a seperate bowl stiffen egg whites
    it is key that you stiffen the egg whites
    it is what makes the cake soft and fluffy

    mix all liquids together
    coffee
    juice

    then alternating with a little bit of flour with the creamed stuff
    then thee liquids over and over till it is all mix together
    then add all the fruit (yummy) then after everything except for the
    whites are mixed fold in the egg whites not too much you dont want to
    over do it it should be way too much but it makes alot i found quite
    a few people who like fruit cake and got one for xmas but it will
    take an average of 3:45mins. to 4 hours for a bundt pan to bake loaf
    pan will take 3 to 3:15mins. it says that all of its baked weight is
    about 10 lbs. but I think it weighs more than that I also found that
    those sillicone bundt pans are the best when it comes to this recipe
    you still oil and flour the pans but they peel off when they are
    cooled off a bit
