VEGETABLE FRITTATA

VEGETABLE FRITTATA....serves 4-6
Light, easy to make, and pretty inexpensive. This makes a great lunch or
light dinner dish.
INGREDIENTS
2 tbsp. olive oil
1 small onion, sliced
1 small potato, sliced thin
2 medium zucchini, sliced
5 eggs, beaten
1 red bell pepper,sliced
1 clove garlic
1/2 tsp. basil
4 tbsp. Parmesan cheese
DIRECTIONS
Heat the oil in a large non-stick skillet. Place onion and potato in skillet
and saute for about 4 minutes, or until the onion is translucent. Add the
zucchini, garlic, and red pepper and cook until zucchini is tender. In a
bowl, beat together the eggs, basil and half of the cheese. Pour the egg
mixture over the vegetables and continue to cook over very low heat until
the mixture is almost set. Sprinkle with the remaining cheese and place
under the broiler for 1-2 minutes, until the top just starts to brown. Serve
at once.
