Uncooked tomato sauce

    1 1/2 lbs. ripe tomatoes, cut into 1/2 inch dice
    3/4 cup chopped basil
    1 clove garlic finely minced
    6 tbsps. olive oil
    1 tbsp. red wine vinegar
    Salt and pepper to taste

    This recipe makes enough for about 3/4 lb. pasta but it can easily be doubled. Toss the cooked pasta with the sauce when the pasta is still hot.
    Refrigeratin this sauce makes it lose much of its flavor. It's best to make just enough to eat immediately.
