Ukrainian Mazurkas

MAZURKAS:
1 cup sweet unsalted butter
3/4 cup eggs, beaten
2 cup ground blanched almonds
1 3/4 cups all-purpose flour.
1 cup sugar
1. Cream butter and eggs until fluffy.
2. Mix almonds, flour, and sugar. Add flour mixture, a small
amount at a time, to the butter mixture. Beat or knead after each addition.
3. Pat or roll out dough in a greased 15x10x1-inch jelly-roll pan.
4. Bake at 350 degrees F. about 20 minutes, or until golden brown.
5. Spread jam over top. Cool for 5 minutes. Cut into 2-inch squares to serve.
ROYAL MAZURKAS:
1 cup butter or margarine (room temperature)
1 1/2 cups all-purpose flour
1 cup sugar
1/4 teaspoon salt
6 egg yolks
1/4 cup ground or finely chopped, blanched almonds
1 teaspoon grated orange or lemon peel (optional)
1. Cream butter until fluffy in a large mixing bowl.
2. Mix flour, sugar, and salt.
3. Alternately beat in 1 egg yolk and a sixth of flour mixture.
Continue until all ingredients are well combined. Stir in almonds
and orange peel. Mix well.
4. Roll or pat dough to fit a greased 15x10x1-inch jelly-roll pan.
5. Bake at 325F 35 to 40 minutes, or until golden but not browned.
6. Cool in pan on rack 10 minutes. Cut in fourths. Remove from pan.
Cool on rack.
MAZURKAS WITH FRUIT AND NUT TOPPING:
Mazurkas or royal mazurkas any one above:
Fruit filling:
3/4 cup raisins or currant
1/2 cup chopped dried apricots
3/4 cup diced dried figs or dates
2/3 cup chopped candied lemon or orange peel
3/4 cup chopped blanched almonds
1/2 cup chopped walnuts
Topping:
1 egg
1 egg white
1/2 cup confectioners' sugar
1/3 cup butter, melted
1 tablespoon lemon juice
1 teaspoon vanilla extract
2 ounces almonds, ground (about 3/4 cup)
2 tablespoons bread crumbs
1. Prepare and bake mazurkas as desired. Do not cut into squares.
2. For fruit filling, combine apricots and raisins in a saucepan.
Add water. Bring to boiling. Cover; remove from heat and
let stand 10 minutes.
3. Drain raisins and apricots. Combine with other fruits and nuts.
Spread evenly over mazurkas.
4. For topping, combine egg and white with confectioners' sugar.
Beat at high speed until very thick and fluffy, about 7 minutes.
5. Gradually beat in melted butter, lemon juice, and vanilla extract.
Fold in ground almonds and breads crumbs.
6. Spread egg mixture over fruit layer.
7. Bake at 350 degree F. for about 15 minutes, or until topping is golden but still moist.
