1 pound pork sausage
1 loaf stale sandwich bread, cubed
1 onion, minced
2 cups chopped celery, greens included
1 cup walnut pieces
1 stick butter
2 tablespoons poultry seasoning
2 tablespoons vinegar
1 teaspoon hot pepper sauce
Boil giblets in salted water with the skin from the onion and scraps from the celery. Cook until tender, then chop giblets and reserve broth. Cook sausage, celery and onions in butter. Add remaining ingredients and enough turkey giblet broth to moisten. Season with salt and pepper.
Stuff into turkey before baking or bake separately in casserole.
