Tomato Soup

    From MMMMiami--Tempting Tropical Tastes for Home Cooks Everywhere by Carole Kotkin and Kathy Martin

    This fresh light soup sure beats Campbell's.
    Serves 8

    4 tablespoons olive oil
    2 onions, finely chopped
    2 garlic cloves, crushed
    8 pounds tomatoes, peeled and seeded or 4 cans (28 ounce) peeled tomatoes
    with liquid
    salt and pepper to taste
    1 tablespoon sugar
    1 bay leaf
    1 teaspoon dried thyme
    1/4 cup fresh basil, finely chopped
    pinch of cayenne pepper

    Heat oil in a large pot and saute onions until soft. Add garlic and saute one minute more. Add the remaining ingredients. Simmer, uncovered, for
    about 20 minutes. Remove the bay leaf and puree soup in a blender. Return soup to the pot and cook until slightly thickened.
