Tomato Salsa with Lavish Crisps

2 cloves crushed garlic
1-2 tsp chopped red chillies
425g can crushed tomatoes (large can)
2 chopped pimientos/capsicum
1/3 cup chopped parsley
2 tbls oil
1/4 cup sour cream
3-4 sheets lavish bread
Heat oil and add onion, garlic and chilli and stir over med heat until onions are soft (about 2 mins).
Add tomatoes, pimientos/capsicum and lemon juice and bring to boil. Reduce heat and simmer uncovered until reduced and thickened (about 5 mins) then stir in parsley. Cool in a bowl (this recipe can be served hot as well) and place in fridge while making lavish crisps.
Cut 1 slice of lavish bread in half and then into small triangles. Place on oven tray and sprinkle with favourite seasoning (i use cajun, lemon pepper etc) Bake in oven until crisp (about 7 mins). Repeat with remaining lavish bread.
Top salsa with sour cream and serve with lavish crisps.
