2 lbs. ground beef
2 16 or 19-oz cans enchilada sauce
2 cups shredded cheddar cheese
16-20 flour or corn tortillas
One onion (chopped or pureed)
Sliced jalapenos (chopped or pureed)
Green onions (chopped) *optional
Heat oven to 375 degrees. Brown ground beef over medium-high heat until thoroughly cooked; spice with chili powder and drain. Stir in 1-½ cups of enchilada sauce, onions, jalapeno slices, and one cup shredded cheddar cheese. Once stirred, spoon enchilada filling onto the tortillas; roll up and place seam-side down in a lightly greased 13x9x2-inch baking dish or pan. Mixture makes about 16–20 enchiladas. Pour remaining filing and enchilada sauce over the top and sprinkle with remaining cheddar cheese. Bake at 375 degrees for 25-30 minutes (or until the cheese has melted). Top with green onions and serve.
