Toasted Pumpkin Seeds

    Called pepitas in Mexico, pumpkin seeds make an excellent snack.

    2 cups pumpkin seeds (membranes removed)
    1/4 cup vegetable oil
    salt

    Preheat oven to 350 degrees.Place the seeds in a strainer and rinse under cold running water till they no longer feel slick. Dry seeds well with paper
    towels, spread them out on a baking sheet and drizzle evenly with the vegetable oil. Toast seeds 15-20 minutes or till golden brown, shaking the
    baking sheet from time to time. Drain on paper towels and sprinkle with salt.
