Tabouli Salad

    1 C. Dry Bulgur
    2 C. Water
    2 C. Cooked Black Beans, drained & rinsed
    1 C. Cooked Frozen Corn
    1 C. Chopped Cucumber, peeled with seeds removed
    1/2 C. Chopped Red Onion
    1/2 C. Chopped Fresh Parsley
    1 Fresh Tomato, chopped
    1/4 C. Fresh Lemon Juice
    2 Tbsp. Balsamic or Wine Vinegar
    2 Cloves Minced Garlic
    1/8 tsp. Freshly Ground Black Pepper
    1/4 tsp. Salt Free Seasoning (Mrs Dash or Morton's)

    Bring water to a boil & stir in bulgur. Cover pan & remove from the
    heat & let stand 20-30 minutes or until bulgur is soft. Squeeze or
    drain off any remaining liquid. Add remaining ingredients & toss
    until thoroughly mixed. Cover & refrigerate overnight. Serve as
    salad or side dish.
