TOFU WITH MUSHROOMS AND SPINACH

2 tblsp soy sauce 1 pound firm tofu, sliced in 1/2 in thick
2tblspginger ale or orange juice tofu with spinach:
2 cloves minced garlic 1 tsp canola oil
1 tblsp minced gingerroot 1 package (3.5 oz) fresh shitake mushrooms,
1 tblsp hoisin sauce sliced thinly
1 tblsp rice or apple cidervinegar 2 cups leaf spinach, washed and trimmed
1 teasp. chili paste 8-12 garlic chives or 8 scallions, sliced thin
1 teasp sesame oil
Combine marinade ingred. in glass baking dish-add
tofu, covver and refrigerate 1 hour to 10.
When ready, drain tofu from marinade,-place in hot pan with oil,brown each side 2 min.
Remove tofu,add mushrooms and cook 1 min.Add reserved marinade, reduce heat and simmer 2 min.
Return tofu to pan, cover with marinade-place spinach over tofu and cover with lid 1 min. Divide among 4 plates-garnish with chives-enjoy!!!!
