Sweet and Sour Pork

    3 Tsp oil
    3 Tsp soy sauce
    1 oz cornstarch
    6 oz onion, sliced
    2 lb pork strips
    1 Cup pineapple chunks
    6 oz bell pepper, sliced
    2 oz + 4 Tsp vinegar
    4 oz water
    2 oz brown sugar

    Cut 2 lbs pork strips into 1 to 1/2" pieces, then brown in 1 Tbs oil. Drain 8 ozs pineapple chunks; reserving the liquid. Stir 2 Tbl constarch into 1/2 cup water and combine with 1/4 cup brown sugar, 1/3 cup vinegar, 1 Tbl soy sauce, and the reserved pineapple juice. Cook until clear and slightly thickened, about 2 minutes. Add the sauce to the pork and simmer for about 1 hour, covered, over low heat, or until the pork is tender. Add the bell pepper, onion and pineapple chunks. Cook for 2 minutes.
