for meatballs:
1/2 lb ground chuck; 1/2 cup Italian bread crumbs
1/2 cup finely grated Parmesan or romano cheese
2 large eggs; 1 tsp. garlic powder
1 tsp. basil; 1tbsp dried parsley
salt and pepper to taste
for sauce:
1/4 cup olive oil; 1 onion peeled and chopped;
6 to 8 cloves garlic, peeled and chopped; 3 links hot sausage;
3 links sweet sausage; 4 spare ribs cut into individual ribs;
2 28oz. cans tomatoes in tomato puree; 1 12oz. can tomato paste;
2 tbsps. dried parsley; 1 tbsp. basil;
1 tsp. oregano; salt and pepper to taste
Prepare meatballs:
In large bowl combine all meatball ingredients. Add 1/4 cup water and blend well. Shape into 1-1/2 inch balls. Set aside.
Sauce: Place a large, wide mouth pot over medium-high heat. Add olive oil. When oil is hot add onions and garlic and stir till onion is softened but garlic is not browned. In batches brown hot sausages, sweet sausages, spare ribs and reserved meatballs transferring meats to a platter when they are browned. When all are browned, return them to the pot. Place tomatoes and their puree in a large bowl and crush by hand into small pieces. Add to pot. Add tomato paste and fill empty can with water and add to pot. Add parsley, basil, oregano and salt and pepper. Simmer uncovered for at least 1 hour. Serve over pasta.
