Stir Fried Grouper w/Sun Dried Tomatoes

    If no grouper available, try other firm flesh fish like monkfish

    1/2 c. (not oil packed) sun-dried tomatoes
    1/2 c. boiling water
    2 tsp olive oil
    1 oz canadian bacon, diced
    2 tsp pine nuts
    1-1/2 lb grouper fillet, cut in 2" chunks
    1 tbls flour
    1/4 c. minced scallion
    3 garlic cloves, minced
    3 c. small broccoli florets
    1/4 c. golden raisins
    1/4 c. orange juice

    In small bowl, combine the sundried tomatoes and boiling water and
    set aside til softened, about 10 min. Reserving the soaking liquid,
    drain and coarsely chop the tomatoes.

    In lrg nonstick skillet, warm oil over med heat til hot but not
    smoking. Add the bacon and pine nuts, cook for 1 min.

    Dust the grouper with the flour, add it to the pan and cook til
    golden, about 3 min.

    Stir in the scallions and garlic; cook for 30 sec. Add the broccoli,
    sundried tomatoes and reserved soaking liquid and raisins. Cook
    stirring frequently til fish and broccoli are tender, 4-5 min.

    Remove pan from heat, stir in orange juice and serve.
