Spring Vegetable Paella

Rice:
Liquid from 1 jar artichoke hearts
1 1/2 cups brown rice
1 tsp salt
1/2 tsp saffron
Water make 3 cups with artichoke liquid
Veggies:
1 cup onion, minced
1 cup chopped celery
2 garlic cloves, minced
1 tsp thyme
1 red bell pepper, cubed
1 yellow bell pepper,cubed
1 pound asparagus, cut into 2" pieces
1/2 lb snow peas
1 cup chopped tomatoes
1 cup cooked chickpeas
artichokes, cut in quarters
1 Tbls olive oil
salt and pepper
Mix artichoke liquid, water, salt and saffron with rice, cover and bring to a boil. Lower heat to a simmer til liquid is absorbed, about an hour.
Cook onion, celery and garlic, in just enough water to keep from sticking, til onions are soft. Add thyme, bell peppers, and asparagus. Cover, and cook at medium, stirring frequently, for about 5 minutes. Be sure there is enough water to keep veggies from sticking. Add peas, tomatoes, artichoke hearts and chickpeas, stir and simmer til tender. Turn heat to low and drizzle with about 1 Tbls of olive oil. Serve veggies over rice, salt and pepper to taste.
