Spicy Eggplant Casserole

1 1/2 Tbsp. Tabasco pepper 1 (12 oz.) pkg. shred.
sauce mozzarella cheese/3 c
2 Tbsp. olive oil 1/2 c. Italian parsley,
l lg. eggplant (about 1 coarsely chopped
1/4 lbs.) 1/2 c. grated Parmesan
1 (26 oz.) jar marinara
1. Heat oven to 400 F. Combine 1 Tb. Tabasco sauce and olive oil in a small bowl. Cut eggplant into 15 slices and arrange in a single layer on a baking sheet. Brush with Tabasco-oil mixture. Broil 3 to 4 inches from the heat source for 2 to 3 minutes. Turn over and brush with remaining Tabasco -oil mixture. Broil 2 to 3 minutes more.
2. Combine marinara sauce and remaining 1/2 Tb. of tobasco sauce in a medium bowl. In a separate bowl, mix together mozzarella cheese, chopped parsley and Parmesan cheese.
3. Arrange singel layer of broiled eggplant on the bottom of a lightly greased 2-qt. or 9-in. square baking pan. Spread with a third of both the sauce and cheese mixture. Repeat layers with remaining eggplant, sauce and cheese.
4. Bake for 15 minutes or until hot and bubbly. Let stand 10 minutes before serving.
