Spicy Chicken Balls

    500g (1lb) chicken mince
    3/4 cup breadcrumbs
    2 tbls chopped coriander
    2 tbls chilli sauce
    1 tbls chopped parsley
    1 onion, finely chopped
    1/4 tsp ground ginger
    pepper to taste
    1 1/2-2 cups breadcrumbs, extra
    oil for deep-frying

    1. Combine chicken mince, breadcrumbs, coriander, chilli sauce, parsley, onion, ginger and pepper in a bowl. Mix well.

    2. Form into walnut-sized balls. Coat evenly with extra breadcrumbs. Deep-fry a few at a time in hot oil until golden. Drain on kitchen paper. Serve warm with plum sauce.

    These may be prepared in advance and reheated in the microwave oven on HIGH (100%) power for 1-2mins. Plum sauce is avail from supermarkets.
