Spiced Roast Beef

    1kg piece of beef/lamb
    2tsp oil

    Marinade
    1 tbls grated ginger
    2 tsp crushed garlic
    1 tsp tumeric
    1 tsp garam masala
    1/2 tsp chilli flakes
    2 tsp lime/lemon juice

    Topping
    2 tbls ground almonds
    1/4 cup plain yoghurt
    1 tbls honey
    1/4 tsp saffron strands
    1/4 cup hot water

    1. Trim excess fat off meat and make slits about 5cm apart all over meat.
    2. To make marinade: combine all ingredients. Add a little extra oil if not spreadable. Coat meat with marinade, pushing it well into the cuts. Cover and refrigerate overnight.
    3. To make topping: mix the almonds, yoghurt and honey together. Heat the saffron strands in a dry pan over low heat until dry and crisp, stirring constantly. Allow to cool. Put the saffron into a bowl and crush with the back of a spoon. Add the water to dissolve saffron. Add to the other topping ingredients.
    4. Preheat oven to moderate. Place meat on a rack in a baking dish and pour a little water in the dish. Bake for 30 mins. Spread meat with topping and cook for 1-1/2 hrs. Leave for a few mins before carving.
