Spanakopita[spinach pie]

    2lbs spinach
    1/3 cup olive oil
    1 cup green onions
    4oz Feta Cheese
    1 cup cottage cheese
    3tbs grated parmesan cheese
    1tsp fresh dill or fennel[optional]
    2tps fresh parsley
    4 eggs, lightly beaten
    1/4 tsp nutmeg
    Salt and pepper
    8oz filo pastry
    Olive oil for a assembling pie
    Wash spinach well, cut off stems and shake excess water off
    Shed coarsely and place in a vegtable steamer or colander over boiling water
    Cover and steam 8 minutes
    Drain off moisture and place in a bowl
    Gently fry onions in oil until soft and add oil and onions to spinach
    Stir in cheeses, herbs, eggs, nutmegand season to taste
    Lightly line 14x10 oven dish
    Line dish with 5 sheets of filo, brushing each sheet with oil
    Add spinach filling and spead evenly
    Trim Filo, leaving enough to tuck into the sides of pan
    Brush top with oil and bake in a moderate hot oven[350]for 45 minutes
    Remove from oven and let stand for 5 minutesand cut into either squares or triangles Spinkle top with water after oiling to prevent pastry curling
    Moisten edges of top layer of filo with water and place remainder of filo on top
