    2 medium onions -- cut 1/4-inch thick
    1 tablespoon chili powder
    1 1/2 teaspoons ground cumin
    1 teaspoon sugar
    1/2 teaspoon dried oregano
    1/4 teaspoon red pepper
    4 pounds round roast, trimmed
    8 ounces tomato sauce
    2 cups picante sauce
    1/2 cup water

    Combine onion and spices; mix well. Set aside.

    Trim fat from roast. Coat Dutch oven with nonstick cooking spray;
    place over medium-high heat. Add roast; cook and turn until browned.

    Mix tomato sauce, picante sauce, and water; pour over roast. Add onion
    mixture. Bring to a boil; cover, reduce heat, and simmer 4-1/2 hours,
    until roast is tender.

    Transfer to serving platter. Serve with picante sauce mixture.


    Per serving = 108 calories, 5 gm fat, 66 mg cholesterol, 394 mg sodium, 5 gm carbohydrate, 25 gm protein
