Sirloin Steak with Carrots

    1 lb carrots, sliced
    2/3 cup club soda
    1 cup white wine
    1 tsp salt
    1/2 tsp sugar
    1 lb sirloin steak
    2 tbsp oil
    2 small onions,chopped
    1/4 tsp pepper
    1/2 cup cream
    1 tbsp parsley, chopped


    Place carrots in a pan with the soda water, wine, 1/2 tsp salt and sugar. Cover and simmer til tender (about 1/2 an hour). Cut the meat into thin slices.
    Heat the oil and saute the onions about 5 minutes.
    Add the beef, cook for 5 minutes, stirring often.
    Season with 1/2 tsp salt and 1/4 tsp pepper. Add the meat and onions to the carrots. Mix. Stir in the cream. Heat through. Check seasoning. Sprinkle with parsley and serve.
