Simple Lime Sauce

Juice the limes and measure the amount of juice. Two to 4 large fruits should yield a cup. Place in a double boiler with an equal volume of sugar, and 1 teaspoon cornstarch for each cup of juice. Cook over, not in, boiling water, stirring constantly until the sauce is thick and translucent, about 4 minutes. Cool to room temperature and store in the refrigerator, covered, for up to a week. The recipe also works with other juices, such as lemon or orange. Reduce the sugar (to taste) for sweet juices such as strawberry.
