Sicilian Cracked Olives

3 jars queen size green olives, rinsed and drained
3 large cloves garlic sliced into 1/4 to 1/2 inch slices
heaping tsp. oregano
1 tsp red pepper flakes or more or less to taste
3 or 4 pepperoncini peppers (optional)
1/2 cup extra virgin olive oil
With the mallet you use for thinning cutlets crack each olive as close to the pit as you can. Place in a jar with the rest of the ingredients, pouring the olive oil over all. Mix all well distributing the garlic and pepper and let marinate in the refrigerator. Try to stir each day. Should be perfect in about five days to a week.
