Shrimp, Pesto and Tortellini

    pesto sauce:
    1 cup spinach leaves, tightly packed
    1/3 cup Parmesan cheese
    1/4 cup slivered almonds
    1 tbsp basil
    1 clove garlic, minced
    1/2 tsp salt
    1/2 tsp fresh pepper
    1/3 cup Olive oil

    body:
    7 oz pkg cheese tortellini
    2 tbsp Olive oil
    1/2 cup slivered almonds
    3/4 lb shrimp, peeled
    1 clove garlic, minced
    1 cup cherry tomatoes, cut in half

    Prepare pesto by processing spinach, cheese, 1/4 cup almonds, basil, garlic, salt, pepper and 1/3 cup olive oil in a blender til smooth. Cook tortellini in a large pot of boiling salted water til tender, stirring occasionally. Drain. In a skillet over medium, saute almonds in 2 tbs oil til golden. Remove. Add shrimp and garlic, saute til shrimp are cooked. Remove. Add cherry tomatoes to pan, let cook 1 minute. Remove. Add pesto to pan, heat through. Combine tortellini and all cooked ingredients with the pesto sauce in a large bowl. Toss and serve warm.
