Scampi, Buon Busto

    16 Scampi or large shrimp shelled and deveined
    1/2 cup flour
    1 egg lightly beaten
    1/4 tsp salt
    1/4 tsp pepper
    1 1/2 cups bread crumbs
    1 sprig parsley, minced
    t tbsp grated parmesan cheese
    1 cup oil
    2 tbsp butter
    worcestershire sauce, cayenne pepper , lemon juice

    Split Scampi into butterfly, and wash in cold water. Dry and roll in flour. Add salt and pepper to egg. Dip scampi into egg and cover with bread crumbs, parsley and parmesan cheese. Fry in hot oil until golden brown on both sides. Place in service dish. Heat butter in pan, add Worcestershire sause, cayenne pepper and 1 tbsp lemon juice. Pour this sauce over scampi. Serve hot with lemon wedges. Serves 2
