Roasted Standing Rib of Beer

Serves 12
1 standing rib roase (7 lbs)
2T olive oil
3T fresh thyme leaves
2 cloves garlic, minced
1 tsp salt
1 tsp cracked black pepper
Preheat oven to 450. Rub roast all over w/olive oil. Combine thyme, garlic, salt & pepper & rub all over roast. Place roast rib side down in a roasting pan. Roast for 30 minutes. Reduce heat to 325 and continue to roast -= allowing 15 minutes per lb. for medium (140 F on a meat thermometer).
Allow roast to rest while baking Yorkshire Pudding
YORKSHIRE PUDDING
4large eggs, litely beaten
2 c milk
2c all purpose flour
1/2 tsp salt
2T hot beef drippings, plus more to grease pan.
Preheat oven to 450. Generously grease a 13 x 9 baking pan or 12 popover pans; heat pans. In a large bowl whisk together the eggs & milk. Gradually mix in the flour & salt; stir in the beef drippings. Pour batter into prepared pans. Bake 10 minutes; reduce heat to 375 and cotninue baking 10 miutes for popovers or 15 to 20 minutes for baking pan. Serve immediately with roast beef.
