Railroad Roast Beef

1 tsp cumin seeds
1 tsp coriander seeds
1/2 tsp black peppercorns
3/4 tsp salt
1/2 tsp ginger
1/4 tsp cayenne pepper
2 1/2 lbs potatoes, cut in chunks
8 carrots, cut in chunks
4 tbls olive oil
3 1/2 lb eye of round roast
1 clove garlic, thin sliced
2 tbls chopped cilantro
Preheat oven to 350F. Place first 3 ingredients in small bag. Crush. Transfer to small bowl; mix in salt, ginger and cayenne.
Toss potatoes, carrots and 3 tbls oil in large bowl. Sprinkle with salt and pepper. Spread in roasting pan. Roast 30 minutes.
Meanwhile, using tip of knife, make several slits in roast; insert garlic. Brush roast with remaining oil. Rub spice mix over roast.
Push veggies to side, place roast in center of pan. Roast til thermometer inserted in center of meat registers 125F (med rare) about 1 hour. Transfer to platter. Cover with foil. Increase heat to 450F. Spread veggies in pan; continue roasting tender and brown, about 10 minutes. Sprinkle with cilantro.
Surround roast with vegetables. Cut roast into thin slices and serve.
Serves 6 to 8.
