Quick Cream of Tomato soup for 2

2 cups (500 ml) ripe tomatoes, peeled, seeded,
and chopped, or canned tomatoes (drained)
1/2 cup (125 ml) cream, Half & Half, or milk
2 tsp (10 ml) chopped fresh parsley
2 tsp (10 ml) chopped fresh basil
A grating of fresh nutmeg
Salt and freshly ground black pepper to taste
1 Tbs (15 ml) dry sherry (optional)
Lemon slices for garnish
Place the tomatoes in an electric blender or food processor and puree.
Add the remaining ingredients and stir to combine. Serve hot or
chilled. Garnish each serving with a slice of lemon. Serves 2.
