THIS BATTER IS THICK AND REQUIRES SOME SPREADING AFTER SPOONING ONTO THE GRIDDLE.
1-1/2 CUPS UNBLEACHED WHITE FLOUR
1/3 CUP SOY MILK POWDER OR NONFAT DRY MILK
1/4 CUP PACKED BROWN SUGAR
2 TSP.BAKING POWDER, 1/4 tsp baking soda
1/2 TSP CINNAMON, 1/4 TSP NUTMEG
1/8 TSP GROUND GINGER, 1/8 TSP GROUND CLOVES
1-1/4 CUPS WATER.
1/2 CUP CANNED PUMPKIN
2 TBLSP CANOLA OIL
2 TSP VANILLA
In large bowl, combine flour, milk powder, sugar, baking powder, baking soda, and spices. Stir to combine well. the mix is now ready to package or to prepare for cooking.
In small bowl, combine water, pumpkin, oil and vanilla. Pour into dry ingredients and stir until moistened.
Heat griddle-spray or oil -spoon batter onto hot griddle in 3 to 4 tblsp. portions about 5 in. aprart. Cook until bubles pop , and bottom is dark golden color-1-to min. flip over and cook until golden on bottom-30 sec.-1 min.
