Pork Chops, Braised Italian Style

1 tablespoon olive oil
4 center cut pork rib chops, each weighing about 4 ounces
1 teaspoon minced garlic
4 bay leaves
1/2 cup chicken stock (optional)
salt and pepper
Preheat oven to 425°F. Drizzle the olive oil into a 9 X 12 roasting pan. Salt and pepper the chops and place them in the pan. Sprinkle with minced garlic, dividing evenly. Roast in the oven 10 minutes. Turn the chops and place a bay leaf on each one. Roast 10 minutes more. Remove from heat, tent with foil and let stand 5-10 minutes before serving. If not enough juices have accumulated in the pan, deglaze with the chicken stock. Correct the seasoning. Garnish with chopped parsley.
Serve the chops with the pan juices, accompanied by pasta with pesto sauce.
