Poached Dried Fruit with Whole Spices

1 cup apple juice
3 cups water
6 whole cardamom pods
6 whole cloves
1 cinnamon stick
1/2 vanilla bean
375g (about 11oz) pkt dried fruit salad
1/2 cup sugar
1/4 cup soft brown sugar
Using a vege peeler, peel 3 lge strips of orange rind, avoiding the white pith. Peel large strips off the lemon. Cut half of both rinds into small strips.
Place the apple juice, water, whole spices and thick strips of rind in a large pan and bring to boil. Add the dried fruit. Remove from heat and set aside for 2 hours.
Return the pan to heat and add the combined sugars and thin strips of rind. Cover and cook over low heat for 5 mins or until soft. Remove fruit with a slotted spoon to a serving bowl (discarding whole spices). Simmer the juice for another 5 mins until reduced and thickened slightly. Add the brandy. Serve fruit warm or cold, drizzled with juice.
Delicious also served with a dollop of pure cream.
