1-20oz can crushed pinapple(undrained)
2 cup flour
1 cup sugar
1 cup brown sugar
2 t. baking soda
1 c. walnuts
Beat eggs until light and fluffy. Add pineapple, flours, sugars, and bakig soda. Mix by hand of too much air will get in thebatter and cake will fall. Stir in walnuts, Spread in an greased 9x13 baking pan.bake at 350° for 45-50 minutes. Cool and frost with Whipped topping or icing.
Cream Cheese Ginger Icing - beat 3oz cream chease, 1/4 cup butter and 1t. of vanilla. Gadually add 2c. powdered sugarand 1/2 tsp ground ginger, beat until a smooth consistancy.
Sprinkle top of cake with additional walnuts after frosting!
