Peanut Butter and Jelly Muffins

    2 cups flour
    1/3 cup sugar
    1 T baking powder
    1/2 tsp salt
    1/2 cup peanut butter
    1 cup milk
    1 egg
    1/4 cup oil
    1/2 cup grape jelly

    Mix flour, sugar, baking powder and salt. Add peanut butter, mix til crumbly. Add milk, egg and oil, mix just til blended. Spoon half of the batter into 12 paperlined muffin cups, dividing equally. Spoon 1 tablespoon of jelly into center of each muffin. Cover with remaining batter. Bake in 400 degree oven 18-20 minutes, til light brown. Serve warm or at room temperature. Makes 1 dozen.
