Peach Chutney

    4 pounds peaches, peeled, pitted, diced
    1 quart cider vinegar
    1 1/2 pounds brown sugar
    1/2 pound dark raisins
    2/3 cup minced peeled fresh ginger root
    1/2 cup chopped onion
    2 Tbsp chili powder
    2 Tbsp mustard seeds
    1 Tbsp salt
    1 clove minced garlic

    Combine all ingredients in large kettle. Heat to boiling; reduce heat. Simmer uncovered until thick and rich brown in color, 1 to 3 hours.
    Pour into sterilized 1/2 pint or pint jars, leaving 1/2 inch headspace in jars. Water bath 10 minutes.
