Old-Fashioned Scones

    2 cups all-purpose flour
    1 tbsp baking powder
    1/2 tsp baking soda
    pinch salt
    1/2 cup cold butter, cut in pieces
    1 cup raisins
    2 tbsp granulated sugar
    1 egg, separated
    3/4 buttermilk, or plain yogurt
    granulated sugar for dusting

    Preheat oven to 375F.

    In large bowl, combine flour, baking powder, baking soda, and salt. Using wire pastry blender, two knives or food processor, cut in butter until mixture resembles coarse crumbs. Stir in raisins and sugar.

    In small bowl, whisk together egg yolk and buttermilk. Mix into flour mixture with fork until soft dough forms. Gather into ball; turn on to floured surface and knead a few times. Roll out until about 3/4-inch thick. Using a glass or cookie cutter, cut into 2 1/2-inch rounds. Brush with egg white; dust with sugar.

    Bake on greased cookie sheet or on Silpat plastic liner for 18 to 20 minutes or until golden brown.

    Makes about 16.
