Old Fashioned Lemon Meringue Pie

    1 1/4 c sugar
    6 tbs cornstarch
    1/4 tsp salt
    1 1/2 c water
    3 egg yolks
    1/3 c lemon juice
    2 tsp grated lemon rind
    1 tbs butter

    3 egg whites
    1 tsp warm water
    1/4 tsp cream or tartar
    6 tbsp sugar
    2 tsp cornstarch

    Combine sugar, cornstarch, salt and water in saucepan. Cook until thick and clear, stirring constantly. Beat together egg yolks and lemon juice. Add small amount of hot mixture to yolks first. Then stir into custard and cook until mixture comes to a full boil again. remove from heat. Stir in lemon rind and butter. Cover while making meringue.

    To make meringue: Add water to egg whites and beat at highest speed until frothy. Sprinkle in cream of tartar. Then reduce speed slightly and gradually sprinkle in sugar and cornstarch. Quickly return to highest speed and beat until sugar is dissolved and very stiff glossy peaks are formed. Pile meringue on pie going around edges first, being careful to completely "seal" the meringue onto the crust (helps shrinkage). Pile higher in center and swirl to make attractive. Bake at 325 to 350 degrees for approximately 12 to 15 minutes until golden brown.
