No-tomato Chicken Parmesan

    Makes 2 servings

    1/2 lb. boneless skinless chicken breasts or tenderloins
    1/2 cup breadcrumbs
    1/3 cup grated Parmesan cheese
    1 tsp chives
    1 tsp Italian seasoning
    dash of roasted garlic seasoning
    a few drops of lime juice
    2 tbsp olive oil
    1/3 cup goat cheese
    1/4 cup Gruyere
    1 cup milk
    1 bag pre-washed salad mix (romaine goes well with this recepe)
    1/4 cup golden raisons (optional)
    1/4 cup chopped pecans (optional)
    1/4 cup olive oil and vinegar

    Preheat oven to 350 degrees

    Mix breading mixture of breadcrumbs, Parmesan, chives, Italian seasoning, roasted garlic seasoning, lime juice, and olive oil

    Saturate chicken in milk and coat in breading. Place in small casserole dish. Cover chicken with excess breading. Crumble half the goat cheese over the chicken. Bake uncovered for 25 minutes.

    Serve chicken on top of a basic vinegrette salad- tastes best with romaine, golden raisons, pecans, and a small amount of olive oil and vinegar. You just want to moisten the salad, not add any flavor. Add remaining goat cheese to salad. Place chicken on top and grate Gruyere over top.
