New Orleans Style Seafood Gumbo

1 cup flour 1 cup Oil 1 6oz can tomato paste 1 can rotel diced tomatoes 1 cup chopped celery 1 lg onion chopped 2 bunches green onion chooped 2 cloves garlic chopped 3 bay leaves Rouex: combine oil & flour in a 7 qt pot stir on med.to low fire until brown (wood brown) then add all veg.ing. & saute untel tender add tomato paste,rotel tomatoes & stir into rouex & veg.add 5 qts of water and bay leaves bring to a ripid boil then lower to med. heat for 30 min. then add all seafoods and bring back to a med. boil for 30 min. serve over rice (serves 8) eat with crackers
