New Mexican Duck

    2 wild duck
    bacon

    Stuffing:
    4 1/2 cups soft bread crumbs
    1 cup finely chopped celery
    1 cup finely chopped onion
    1 cup chopped pecans
    salt
    1/2 tsp poultry seasoning
    1/2 cup milk, scalded

    Chili Sauce Mixture
    1 cup catsup
    1/2 cup Worcestershire
    1/4 cup A-1
    1/2 cup pureed mild red chiles

    Clean ducks and soak in salt water at least 4 hours before cooking.

    Mix stuffing ingredients together. Rinse ducks, stuff, and wrap in bacon. Cover with foil. Roast at 300F for 3 1/2 hours. Mix together sauce ingredients. Baste duck with sauce mixture during last half hour. When serving, have remaining sauce hot in small dish to spoon over. Serves 4.
