My mom's stuffed chicken

    4 skinless, boneless chicken breasts
    1/2 cup butter, melted

    2 cups dried bread cubes
    2 tablespoons chopped onions
    1/2 teaspoon salt
    1/4 teaspoon poultry seasoning
    dash of pepper
    2 tablespoons butter, melted
    1/2 cup hot water
    Optional ingredients: 1/4 cup chopped celery, 1/4 cup diced MacIntosh apples, 1/4 cup chopped pecans

    Combine all dry ingredients in a medium bowl. Add hot water and 2 tablespoons melted butter; toss gently to moisten.

    Coating Mixture:
    1/4 cup flour
    1/2 teaspoon salt
    1/4 teaspoon paprika
    dash of pepper

    Preheat oven to 325 F. Combine coating mixture ingredients in a paper bag or large "baggie". Place stuffing on one piece chicken breast, cover with second piece; hold together using skewers or, if unavailable, by tying with dental floss. Repeat with remaining two pieces. Dip prepared chicken in 1/2 cup melted butter, place in bag and shake to coat. Slow Cook at 325F for 45 minutes, turn over and cook for an additional 45 minutes, or until tender.

    Suggestion: Double the stuffing recipe and place any that is left after stuffing the chicken all around it in the pot with a tiny bit of water and the rest of the melted butter. Result: lots of hot, yummy stuffing to go around, some of it soft and moist, some of it slightly crispy.
