3 lbs. white mushrooms, chopped
2 Tbles. olive oil
1 lb. Italian Pork sausage
1 large white onion, chopped
3 large cloves of garlic, minced
1 1/2 tes. salt
3 Tbles. butter
1/2 Cup chopped green onions
1/4 Cup Italian parsley
1 Tbles. fresh sage
2 Tesp. fresh thyme
1 1/4 Cup fresh breadcrumbs
1 1/2 Tbles. olive oil
Add oil to frying pan and saute sausage, onion, garlic and salt. Add mushrooms and cook 25 minutes and then cool in a bowl. Once cool add the rest of the ingredients except for the last 1/4 cup bread crumbs.
Preheat the oven to 350 degrees and grease a casserole. Add mixture to the casserole and sprinkle with remaining bread crumbs. Drizzle with 1 1/2 Tbles. olive oil and bake for 35 minutes.
