2 qts. prepared rind
1/2 cup salt
2 qts. water
2 cups vinegar
2 cups water
3 cups sugar
1 lemon thinly sliced
1 stick cinnamon
1 tsp whole cloves
1 tsp whole allspice

Remove outer skin and pink from rind cut into bite size pieces. Soak overnight in salt and 2 qts water. Drain and wash with fresh water drain again. Simmer in fresh water
just till tender. Make a syrup of the remaining ingredients and simmer 5 minutes. Add rind and cook until clear. Pack in hot sterlized jars and fill with syrup, seal immediately
