Mini-pumpkins with Cranberry Chutney

MINI-PUMPKINS WITH CRANBERRY CHUTNEY
2 cups cranberries 2 small tomatoes, peeled,
1/2 C light raisins coarsely chopped
1/4 C Chopped onion 3/4 cup water
1/2 tsp salt 1 C packed brown sugar
1/2 C Vinegar 1/2 tsp ground ginger
1/2 tsp ground cloves 1/2 tsp pepper
Combine berries, tomatoes, raisins, onion, water and salt. Bring to boiling. Reduce heat. Cover, simmer 15 minutes. Stir in remaining ingredients. Cover, cook 35-40 minutes more; stir occasionally.
Select desired number of mini-pumpkins. Cut off tops much in the fashion you would to start a jack-o-lantern. Clean out inside & replace tops and microwave until cooked, but still retain shape. Stuff the pumpkins with chutney, replace tops and serve. (Can be served at room temp ---or warm)
