Killer Ramen ColeSlaw

    1/2 head purple cabbage, shredded (food processor works best)
    6-7 carrots, shredded
    1/4 c. chives, chopped
    1/4 c. slivered, toasted almonds
    1 pkg. ramen noodles, oriental flavor (save the flavor packet)
    1/2 c. soy sauce
    1/2 cup rice vinegar
    1 T. fresh ginger root, shredded

    Combine 1st 4 ingredients in a large bowl. Break up dry noodles and mix in with the rest. To prepare dressing, place soy sauce, ginger and flavor packet in a shaker container and pour over salad and mix in. The ramen absorbs a lot of the soy, so I usually make this a day ahead for the flavor to sink in.
