Killer Cherry Chutney

    Killer Cherry Chutney

    2 cups dried cherries, preferably the Montgomery, not the Bing
    1 1/4 cup of white sugar
    3/4 cup white vinegar
    1/4 cup finely chopped celery
    1/2-2/3 cup of grated fresh ginger
    6 tbsps sweet fresh orange juice
    zest of one orange
    Squeeze of a lemon
    1 tsp crushed dried red pepper (or more)
    Dash of salt and pepper

    Combine all ingredients except the zest and the celery. Microwave for 6-8 minutes. Stir. Cook another 6-8 minutes. Stir. If the mixture is thick and yummy, go ahead and add the celery and zest. cook for 3 more minutes. If the mixture is not thick and yummy, cook for 3 minutes more and then add the celery and zest, and then cook for 3 minutes.

    Allow chutney to cool. Put in covered jars. Keeps for a week or so in the fridge.
