Jewish Apple Cake

    Jewish Apple Cake

    8 cups apples, peeled and sliced
    1/2 cup sugar
    1-1/2 tsp cinnamon
    3/4 cup oil
    1 1/2 cups sugar
    3 eggs
    1 cup orange juice
    1 tsp vanilla
    1/4 tsp salt
    2 tsp baking powder
    2 1/2 cups unbleached all-purpose flour

    Prepare apples and toss with the 1/2 cup sugar and cinnamon. Preheat oven to 350 F. Generously grease a 9x13 inch rectangular baking pan or a 10 inch springform pan. Blend oil and sugar to combine. Beat or whisk in eggs, then orange juice and vanilla. Fold in salt, baking powder and flour to make a smooth, soft batter. Spoon half of batter into prepared pan. Top with apples, then remaining batter. Bake until cake is crusty and set on top, about 45 minutes. Serves 10-12
