Italian meatballs

    1 lb ground beef
    2 tbsp romano cheese, grated
    1 small clove garlic, chopped fine
    3 slices stale bread or 1 cup coarse fresh bread crumbs
    1 tbsp chopped parsley
    2 eggs
    salt and pepper

    Soak bread in water for a few minutes, squeeze out excess water.
    Mix thoroughly with all the other ingredients. Shape into round or ovals, not larger than a small lemon.
    Sear in hot olive oil (about 2 or 3 tbsp)
    Add to favorite spaghetti sauce.
