Italian Bean Soup

    1 cup sliced carrots
    1/2 cup chopped onion
    1 clove garlic, minced
    1 tbls butter
    2 15 oz cans white beans, rinsed
    2 15 oz cans chicken broth
    4 oz can chopped green chiles
    1 cup fresh mushrooms, sliced
    1/2 tsp oregano
    1/4 tsp fresh ground white pepper
    2 cups spinach leaves, chopped
    1/2 cup shredded mozzeralla

    In large pan, cook carrots, onion and garlic in butter over medium til onion is tender. Add beans, chicken broth, chiles, sliced mushrooms, oregano and pepper. Bring to a boil, reduce heat and simmer 10 minutes. Add spinach and continue simmering til spinach is cooked. Ladle in bowls and top with about 2 tbls cheese. Serves 4.
