Homemade Bread

    2 packages of yeast (5 teaspoons)
    2-1/2 cups slightly hot water
    1/4 cup plus 2 teaspoons sugar
    2 eggs
    1/2 cup cooking oil
    1/2 teaspoon salt
    1 cup plus 7 cups flour
    cooking spray

    Put 2 teaspoons sugar and yeast in large bowl. Pour hot water over yeast and stir to mix. Add 1 cup flour and mix well with whisk to make a smooth batter. Cover with a cloth and let rise for thirty minutes. Mix 1/4 cup sugar, eggs, oil and salt together. Add this mixture to the yeast mixture and stir to mix well. Stir in 6 cups flour and mix well. Add enough of the remaining cup of flour to make a stiff dough. Form into a ball and place in a large greased bowl. Cover with a cloth and allow to rise until double in size. Punch down. Preheat oven to 350. Lightly grease and flour two loaf pans or spray pans with cooking spray. Gently shape into loaves and place into prepared pans. Let rise again until doubled in bulk. Bake 45 minutes to 1 hour until golden brown and hollow sounding when thumped. Remove from oven and brush top of loaves with melted butter.Cool on a rack.
