1 stalk celery, chopped
1/3 of a small onion,chopped
1/2 tsp. salt
Dash of pepper
Turkey giblets..can add some extra to make richer
4 cups water
Turkey drippings with fat removed, and 1/2 cup of the fat
1/2 cup flour
Simmer celery,onion, turkey giblets, salt, and pepper in water, covered for about an hour.. Strain, measure, and add water to make 4 cups.. Chop giblets and add to stock in pot. Remove turkey from oven when done. Pour fat off and put drippings in pot. Take 1/2 cup of the fat and mix with flour mixing really well. Add to stock and simmer, stirring, until thickens, simmer a minute or two more. If you double it, which I do, I usually use a little more flour than called for and have some chicken broth handy to add....hate thin gravy!
